Homemade Pita Night
Every once in a while I find myself baking at really odd (or late) hours of the day. Last Thursday night was homemade pita night. Oh, the joys of pita! It was time to finally try one of the recipes I found on Pinterest. Since I happened to have all four ingredients I decided to make a midnight snack.
All was fine and dandy, until I remembered it was almost midnight…and kneading by hand would take a while.

To prepare, crush the fruit you want to incorporate (kiwi, mango, cherries, limes, watermelon, etc) with some homemade lemonade. Then fill your bucket with the mixture and freeze. When ready, add these cubes to your lemonade and enjoy new flavors.
Since last fall, I’ve been using coconut milk for my vegan cakes, cupcakes and muffins. I absolutely enjoy the creative challenge of making vegan desserts that taste like the real thing.
